italian sub salad (slash dip)

 

being mostly gluten-free, per usual i am always trying to make non gluten versions of things i love.  i’ve made lettuce wraps using classic italian sub ingredients, but that was kinda a pain in the ass.  so making a “salad” seems like a good thing to try.  while i know that the photo is not gluten-free, the lettuce wrap photo-op was less successful.  so, it works in a lot of ways… as a lettuce wrap, over salad, on a sandwich and as a DIP.  it’s great with kettle chips or sliced baguette.  you can add whatever you favorite toppings and if you aren’t a fan of mayo, replace the dressing with italian dressing of your liking.

makes plenty for a party dip, about 6 sandwiches or lots and lots of lettuce wraps

for dressing

1/4 cup roasted red pepper (check the salad bar)
1 large garlic clove
1 tablespoon balsamic glaze (or 1 teaspoon balsamic vinegar & 1 teaspoon honey)
1/2 cup mayo
1/4 olive oil
1 teaspoon dried oregano

. in food processor combine all of the above & set aside

for salad

1/4 lb hard salami from deli counter, cut into 1/3 inch pieces
1/4 lb ham from deli counter, cut into 1/2-3/4 inch pieces
1/4 lb turkey or chicken from deli counter, cut into 1/2-3/4 inch pieces
1/3 package pepperoni, cut into 1/4 inch pieces
3 slices of provolone, cut into 1/4 inch pieces
2/3 cup cherry tomatoes, cut into half or quartered depending on size
1/2 cup white onion, finely minced
1/2 cup sweet pepper strips, finely minced

. combine dressing & above ingredients until well combined
. salt & pepper to taste
