bacon cheeseburger salad… say what?


being gluten free for the most part & wanting to be generally healthy, i am always trying to find ways to make my favorite guilty food pleasures into “better for you” versions of themselves.  i love burgers, it’s a serious kind of love.  i think the fact that i had grease from the best burger i’ve ever had running down my arm on a first date & not even caring might have ruined hopes of a second date. Oops!  Anywho, i decided to try to make a bacon cheese burger into a salad & it worked out really well.  it’s not calorie free & super low fat, but it’s a delicious way to handle your burger craving.  If you aren’t into the creamy big mac kind of sauce & are just a ketchup & mustard kind of person, simply just dress you romaine with those instead.

serves 4 BIG salads

for dressing (makes about 2 cups so there is PLENTY extra):

2 dill pickle spears, deseeded & finely minced
6-8 bread & butter pickle chip, finely minced
1/4 cup white onion, finely minced (if your onion for the salad is LARGE, you can easily just use some of that)
2 tablespoons plain greek yogurt
1/4 cup thousand island dressing (it’s key to use this)
1/4 cup ketchup
1/2 teaspoon yellow mustard
2 teaspoons rice vineager
1/4 cup milk (i used 1%)

for salad:

1 lb 85/15 beef
1 large white onion, finely chopped
3-4 roma tomatoes, deseeded & chopped
8 slices center cut bacon, cooked & crumbled
1/2 cup shredded cheese of you choice
3 romaine hearts, washed & chopped as if you were making a “chopped” salad
salt & pepper to taste

to make salad dressing:
. mix all ingredients in jar & put in the fridge while you make the salad

to make/assemble salad:
. prep all of your veggies & bacon while you cook the beef or make it even easier by prepping them ahead of time
. in skillet over medium-high heat, cook 3/4 onion & beef until onions are soft & beef is cooked perfectly
. add salt & pepper to taste, i add garlic powder too… it’s just up to you to add what seasonings that you would add to your burger
. place your romaine in a bowl & coat with dressing to your liking
.  place romaine & top with tomatoes, remaining onion, beef, bacon & cheese
