keeping it old school… tuna salad


(pictured above, rice cracker, tuna salad, bacon, tomato & chive)

i have to keep it honest, i love tuna salad… and so do you! it’s worse than onion or garlic breath, so most of us keep our love for it under wraps. my recipe is random, but it’s really good. i normally eat it with rice crackers or over a salad of spinach, tomatoes & BACON. it’s pretty mean in a tuna melt too.

1 can albacore tuna packed in water, drained
3 tablespoons white onion, finely chopped
1/2 large dill pickle, seeds removed & chopped
3 tablespoons red pepper, finely chopped
1 egg, hard boiled
1/3 cup mayo (sorry, i never said this was healthy)
2 scallions, finely sliced
1 teaspoon dijon mustard
1/4 teaspoon garlic powder
salt & pepper to taste

hard boiled egg prep
. finely chop egg white
. combine egg yolk to mayo

to make
. combine everything, use less mayo if you like a dryer tuna salad
