how abouta a frittata?

IMG_6200it’s true, every monday i make a HUGE frittata for the breakfasts during the week.  it’s the best way to get a protein packed on the go beakfast without having to spend the 15 minutes in the kitchen every morning when you would rather be sleeping or eating one of those gross protein bars & telling yourself it tastes good.  these can take a little bit of time to prep or it can be a great way to get rid of leftover protein & veggies that are in your fridge.

4 eggs, beaten
3/4 cup egg whites
1 1/2 cups veggies of choice, chopped & sauteed
2 garlic cloves, finely chopped & sauteed
1 1/2 cups of protein, cooked crumbled bacon, chopped ham, cooked chopped sausage etc
1/2- 1 cup cooked chopped potatoes
1/2 cheese of your liking, grated
salt & pepper to taste

. mix everything, except cheese together
. turn broiler to high
. over medium heat in a large flat pan, spray generously with cooking spray of choice
. add egg & everything else mix & let cook until the bottom is cooked & the sides are cooked as well
. place pan under broiler until eggs are cook
. top with cheese, cut off heat & remove from oven when the cheese is melted
. cool for a short minutes, slice & serve

my favorite combos

. veggies- onion, red pepper & spinach (precooked, will be about 4 cups before cooking)
. protein- chicken italian sausage
. cheese- smoked mozz

-all american
.veggies – green pepper & onion
. protein- ham or sausage (i use chicken sausage)
. cheese- sharp cheddar blend
add green onion as garnish & top with crema

.veggies- spinach (precooked, will be about 4 cups before cooking), fresh chopped tomato, onion
. protein- bacon!!!!!! (i use center cut)
. cheese- whatever you like/have

you really can use whatever you have on hand!  i’ve used everything from left over steak to sweet peppers to make a steak & cheese fritatta to roasted chicken & onion jam that i topped with chili honey.
