simple tomato soup, by simple i mean so yummy

i love tomato soup in all forms.  i am a lover of creamy tomato soup in the winter & a fresh gazpacho in the summer time.  i have spent the summer enjoying the creamy tomato soup & gazpacho from ris at union market as my lunch.  i have gone part-time at my job this week and have enjoyed relaxing, having mid-day cocktails, cleaning & researching the perfect tomato soup that i can enjoy all year-long.  ladies & gents, i have made it!  it is so easy to make, healthy, gluten-free, vegetarian & really can easily be vegan friendly.  i just enjoyed it cold with fresh basil & homemade gluten-free parmesan croutons.  i did heat this up to see how it did for a warm winter dinner with grilled cheese, i have to say it was just as delicious!

makes 6 cups

1 small onion, roughly chopped
3 large garlic cloves. crushed
1 can fire roasted tomatoes
4 medium tomatoes. quartered & seeded
1 cup (half of a package) SILKEN tofu, roughly chopped
1/4 cup cream
olive oil
salt & pepper to taste

. in a food processor chop onion & garlic
. in a small saute pan heat olive oil
. add onions & garlic. saute for 5-7 minutes
. remove from heat & set aside
.  rinse out food processor, add tomatoes & process until tomatoes are still slightly chunky (don’t worry about over processing)
.  place everything except salt & pepper in blender
. blend away until the tofu has completely blended into the soup
. season with salt & pepper
.  pop in the fridge until cold or heat over medium heat until hot if you are serving it warm
