cilantro pesto chicken salad


pesto is easy to make and a great way to add lots of flavor to pretty much anything.  ive used this cilantro pesto to make salsa, pasta salad & even a a garnish on a pizza.  by now it should be known i like all kinds of chicken, tuna & seafood salads so lets just add this east delicious one to the list.  i eat it in bibb lettuce cups topped with tomatoes & avocado. nom nom nom.

cilantro pesto

1 bunch cilantro, leaves picked
3 cloves garlic, roughly chopped
1 small jalapeno, deseeded & roughly chopped
1/2 cup toasted pine nuts
1/2 cup parmesan cheese
olive oil

salad ingredients

1 lb boneless skinless chicken breasts
2/3 cup red bell pepper, finely chopped
1/2 red onion, finely chopped
1/2 of cilantro pesto
1/2 cup mayo

. preheat oven to 350 degrees
. cover baking sheet with foil & coat w. cooking spray
. salt & pepper chicken, place on cookie sheet & bake 15-20 or until internal temp is 165
. set aside, cool & shred
. in food processor combine all pesto ingredients, except olive oil
. add olive oil through hole in top of processor just until the pesto is smooth & glossy
. combine chicken, red bell pepper, red onion, cilantro pesto & mayo
.  salt to taste
