sweet potato & black bean veggie sliders

i’ve always enjoyed a good veggie burger but they always seemed intimidating to make at home for some reason.  so i did some looking around to find something fun but not too crazy.  i played around with a bunch of ingredients and came out with this.  i went with a latin flavor because of the black beans & i have to say it worked out pretty well.  i only used about half of the mix, so i just made patties & froze the rest.  i served them with mexican street corn saute & cumin roasted potatoes.  as you will see in the pictures, i also did a chorizo & chicken slider for the meat eaters.  it’s simple 1/2 lb chorizo & 1/2 ground chicken breast.

sliders

1 sweet potato, cooked & cooled
1 can black beans, drained & rinsed
2 cups cooked quinoa
3 cloves garlic, roughly chopped
1 jalapeno, deseeded & roughly chopped
1 small red onion, roughly chopped
1/4 cup rice flour
1 1/2 tablespoons cumin
1 1/2 tablespoons chili powder
1 – 1 1/2 tablespoons salt

. in food processor mix onion, garlic & jalapeno, set aside
. in food processor combine sweet potato & black beans, set aside
. in large bowl combine onion mixture, black bean sweet potato mixture & remaining ingredients until well combined
. form into 16 slider sized patties
. over medium high heat, heat about a tablespoon of olive oil
. add four patties to pan at a time
. cook patties on each side for 5-8 minutes, until they are crispy
. layer sliders, slaw & and avocado cream on toasted slider rolls

slaw
2 cups cabbage, shredded
2/3 cup bell pepper, finely chopped
3 scallions, chopped
1/2 cup cilantro, chopped
2 tablespoons rice wine vinegar
1 tablespoon honey
1/2 lime, zested
salt to taste

. miss all ingredients & salt to taste

avocado cream
1 ripe avocado
1/4 cup buttermilk
1/4 cup mayo
salt to taste

.  in a food processor combine all ingredients until well blended, then salt to taste
