lobster brie & bacon grilled cheese / chicken kimchi grilled flatbread

who doesn’t enjoy a good grilled cheese?  it’s make mac & cheese… everyone loves it.  you can practically put anything on it & create something amazing.  these are two that i created with the inspiration of a few random finds at work including brie, that style kimchi & amish butter.  i made these on a griddle, because my kitchen is in the middle of renovations.  you can obviously make them in a regular pan on the stove as well.  just cook over medium high heat.

lobster brie & bacon grilled cheese

makes 2 sandwiches

2 6 oz lobster tails, cooked by sautéing in amish butter then cooled & chopped into bite size chunks
1/2 lb brie, rinds removed and cut into 1/4 slices (put in freezer for 15 minutes to make for easy cutting)
6-8 slices of center cut bacon, cooked
1/4 mayo
1 teaspoon old bay seasoning
1 small garlic clove, grated
4 slices bread, i used schar gluten-free classic white bread
amish butter

. combine mayo, garlic & old bay, set aside
. heat griddle to 225 degrees
. toast gluten-free bread in toaster (this helps with the fall apart aspect that gluten-free bread)
. spread amish butter on one side of each slice of bread and grill on griddle butter side down
. when the bread is nice & golden, spread butter on the none grilled side of each slice and flip bread over
. quickly layer brie, lobster, bacon & then more brie on 2 slices of bread
. top with remaining slices of bread
. press down on each sandwich a bit to smush the layers together a bit so the sandwich holds together
.  cut off heat and flip sandwiches over when the cheese is nice and melty
. leave on griddle for another moment or 2 & remove from heat
. open sandwich and spread old bay garlic mayo, close back up, smush, cut sandwich in half

chicken & kimchi grilled flatbread

makes 1 flatbread (but is large enough for 2 people)

2 pieces of flatbread, i used harris teeter’s brand that you can find in their fresh food bread section
1 large chicken breast, cooked & shredded
1/2 cup wildbrine thai style kimchi, without brine
1/4 cup cilantro
1/4 cup red onion, thinly sliced
1/4 lb brie, rinds removed and cut into 1/4 slices (put in freezer for 15 minutes to make for easy cutting
2/3 cup shredded mozzarella cheese
cooking spray

. heat griddle to 225 degrees
. spray each side of flatbread
. grill until golden & flip
.  layer 1/2 brie & 1/2 mozzarella cheese, chicken, kimchi, red onion, cilantro then top with remaining brie & mozzarella
. press down on each sandwich a bit to smush the layers together a bit so the sandwich holds together
.  cut off heat and flip sandwiches over when the cheese is nice and melty
. leave on griddle for another moment or 2, remove from heat & cut sandwich in quarters
