spice rubbed chicken “tacos” w. corn salsa & avocado


these things are awesome!  i have been using lettuce to replace gluten/carbs for a long time without flinching.  i love my corn tortillas but with this recipe, they don’t need the added carb/calorie intake, that is just how tasty they are.  the bibb or boston lettuce is perfect for these tacos due to the size.  i use romaine a lot and sometimes iceberg but this lettuce holds up better than other and is cost-effective.  the spice is heavy on the chicken, it’s to give it a “blackened” feel.  i did miss the sour cream or crema piece of this recipe, but the avocado did a good job of balancing it out.  just blend the avocado with crema, sour cream or plain greek yogurt and a little salt to get the full creamy effect if you aren’t dairy free like my detox.

makes about 12 tacos

1 lb skinless boneless chicken breast, cut into 3/4 cubes
1 1/2 tablespoon cumin
1 1/2 tablespoons tablespoons chili powder
1 tablespoon garlic powder
1 1/2 teaspoons salt
1 cup cherry tomatoes, sliced in half lengthwise
2 cups white corn, if frozen defrost & pat dry
4 green onions, white & green parts sliced
1/2 cup cilantro, finely chopped
1/4 cup red onion, finely chopped
1/2 – 1 jalapeno, finely chopped (use as much as you want depended on how spicy you like it)
1/2 teaspoon lime zest
1 avocado, sliced
1 head butter or boston lettuce
olive oil
salt & pepper

. in a bag place chicken & drizzle with olive oil to coat the chicken
. add cumin, chili powder, garlic powder & salt to bag & mix to coat the chicken with spices
. place in fridge while you make the corn salsa
. simply mix tomatoes, corn, green onions, red onion, cilantro, jalapeno & lime zest then drizzle with olive oil & season with salt & pepper
. back to the chicken, in a medium saute pan heat olive oil over medium high heat
. add chicken & cook until pieces are cooked through & the outside is a dark golden color
.  to assemble simply tear lettuce leaves off of the base of the stem for your “shell” & stuff with chicken, corn salsa & sliced avocado

i serve these alone or with simple quinoa topped with cilantro & green onions
