lemon thyme artichoke white bean dip


i needed something healthy & filling for my snack attacks.  i know i can really eat all the buttered popcorn i want, but i wanted some variety.  this is super easy to make & it’s fun enough that you might even kick hummus to the curb for a while.  you can really make this with any herbs & add things like roasted peppers, caramalized onions or bacon.  maybe i’ll create another one with some crazier combo & post later.  ok, this simple combo of flavors is pretty delightful!  It’s great with rice crackers, peppers & cucumber!

1 can of cannaloni beans, drained
3 artichoke bottoms, roughly chopped
1 large garlic clove, roughly chopped
1-2 tablespoons lemon juice (depends on how lemony you want it)
2-3 tablespoons olive oil
1 teaspoon fresh thyme
salt & pepper to taste

.combine all ingredients (besides salt & pepper) in food processor
. salt & pepper to taste
