green curry chicken with lime scallion quinoa

i love curry.  i make a lot of different versions of it, so with a few SMALL adjustments i was able to make a detox friendly version.  i make a big batch of quinoa once a week so that i can make different dishes with it without having to deal with the cooking process.  it keeps great for about 5 days.

makes 6 servings

1 lb skinless boneless chicken breasts, cut into 3/4 inch pieces
1 4 oz jar green curry paste
1 can coconut milk (don’t use “lite”)
1 1/2 cups fresh cilantro leaves
1/2 medium white onion, minced
2-3 garlic cloves, finely minced
4 cup cooked quinoa
1-2 tablespoon coconut oil
1 teaspoon organic cornstarch
one bunch scallions, chopped (green & white parts)
1 lime, zested
salt to taste

. in large saucepan over medium high heat,  heat 1 tablespoon coconut oil
. saute chicken until golden brown on outside, remove from pan using slotted spoon to leave oil in pan  & set aside
. if you need additional oil on pan, add more coconut oil then add onion & garlic to pan
. saute onion & garlic for a few minutes
. add 2/3 can of coconut milk & curry paste (use as much curry paste as you would like, you will be adding the remaining coconut milk later, so you can always adjust the amount then. i use about 2/3 of the jar)
.  reduce heat to low & add chicken back to pan
. while the chicken curry is cooking, in a blender, blend up remaining coconut milk, 1 cup cilantro & cornstarch.
. about 10 minutes before you are ready to eat, add coconut milk & cilantro mixture to pan (this allows the cilantro to stay bright green & full of fresh flavor) & bring heat up to medium high
.  when the chicken curry comes to a boil, reduce heat to low, add salt to taste, adjust curry paste if needed & stir well
.  microwave quinoa until hot (obviously) and mix in lime zest and 3/4 of scallions

to serve, place quinoa in bowl & make a little well in the center, top with chicken curry & garnish with cilantro & scallions
