i love this delicious grain. so, i was happy that it was on the go list for my detox. i make this salad often, but i add feta. it’s about 2/3 veggies & 1/3 quinoa, which makes it all kinds of healthy. with a simple dressing, this salad is fresh deliciousness. use whatever veggies you like. i serve this with simple oven roasted chicken & white bean artichoke dip (recipe to follow another day).
like i said i normally add about a cup of crumbled feta. it makes a lot so it’s great for a potluck or bbq. it’s also great with grilled veggies.
3 cups cooked quinoa (i cook mine with a few cloves of crushed garlic)
1 cup red peppers, chopped into 3/4 inch pieces
1 cup orange or yellow peppers, chopped into 3/4 inch pieces
1 cup cucumber, seeded & chopped in to 3/4 inch pieces
1 cup cherry tomatoes, cut in half
1 cup artichoke bottoms, chopped into 8 pieces per artichoke bottom*
1/2 cup red onion, finely chopped
1/4 cup fresh mint, finely minced
1/4 cup fresh oregano, finely minced
1 tablespoon lemon zest
2-3 tablespoons olive oil
salt & pepper to taste
. combine everything, besides salt & pepper
. salt & pepper to taste
you can find artichoke bottom in most stores. it is the tender part of the artichoke. if you can’t find them just use the same amount of canned artichoke hearts, just watch for the tough pieces & just cut them off.
