while i don’t do much gluten, i have been wanting to make a pressed sandwich.  one that you leave overnight, getting delicious and NOT soggy.  so i decided to make one for my family & some of my friends at work….and for me to try.  it came out AMAZING!  this is something that i hate to share but it really is that good.  it starts with a type of bread called strata but works just as well with ciabatta.  you can play with the filling  but this was a great combo.

makes one large sandwich that could serve up to 6 people

1 loaf strata

1/4 lb hard salami, thinly sliced
1/4 lb deli pepperoni, thinly sliced

basil lemon chicken salad
1 large chicken breast, grilled & shredded
1/4 cup fresh basil, minced
1 teaspoon lemon zest
1/3 cup mayo
2 tablespoons olive oil
salt & pepper to taste

. mix all of the above, set aside

roasted pepper aioli
1 red pepper, roasted
2/3 cup mayo
salt & pepper to taste

. in food processor blend all ingredients until well blended, set aside

parmesan garlic spread
2/3 cup whipped cream cheese
1/2 cup grated parmesan cheese
1 large garlic clove, grated
salt & pepper to taste

. in mixing mix all ingredients, set aside

assembly

. cut open strata loaf as you would a sandwich roll
. drizzle both sides with olive oil & balsamic glaze
. spread roasted pepper aioli on one side & parmesan garlic spread on the other
. on one side pile pepperoni & salami on the other
. on the bottom half spread chicken salad
. close sandwich and TIGHTLY wrap with plastic wrap
. press sandwich with hands & then wrap in foil
. place on baking sheet & top with another baking sheet
. use soup cans or anything heavy to weigh down the top baking sheet
. place in fridge over night

this sandwich is hearty & can be cut and served cold.  i have also QUICKLY pressed it in panini press before eating
