gluten free smoked salmon & scrambled egg “pizza”


what else do you do with smoked salmon besides put it on a big ass everything bagel with cream cheese, red onion, tomatoes, capers & dill? nothing.  but if you are gluten free its hard to find an amazing gluten free bagel.  if you know of one… please comment and bring happiness to my lack of bagels in my life.  since i cant do the bagel, i often make scrambled eggs with smoked salmon and top with tomatoes, red onion & dill.  but i went out of the box the other night when i wanted breakfast for dinner and created this.  i think it would make a great brunch dish as well, just multiply amounts.  just prep the the tortillas ahead of time and stick in the oven on warm until everything else is ready.

makes one personal “pizza”

1 gluten free tortilla ( i used an an 8 inch Rudi’s tortilla)
1 teaspoon butter
1 oz smoked salmon
1 egg plus 1 egg white. mixed
1 tablespoon light alouette garlic & herb cheese
1 roma tomato, seeded and chopped
2 VERY thin slices of red onion
1 teaspoon capers, minced
1 teaspoon fresh dill, minced
1 tablespoon mexican crema

. over medium high heat, in medium saute pan melt 1/2 butter and cook tortilla until golden brown, add other 1/2 of butter & flip cook until the tortilla is crisp & golden brown, set aside
. wipe pan out, spray with non-stick cooking spray & over medium high heat add egg mixture
. cook eggs until soft & add cheese
. remove from heat & mix until cheese is melted

. layer from bottom to top as follows: salmon, eggs, tomato, onion, capers, dill & crema
. garish with a bit of fresh cracked pepper

* i didnt use any additional salt in this recipe because of the saltiness of the smoked salmon & capers, so there is plenty of salt as is.  i use salted butter so to further reduce salt, use unsalted butter.
