meatless monday… fried honey & sweet chili tofu with quick pickled cucumber & red onion & spicy sesame mayo

honey chili tofu

i know its not monday, but im only one day off… i have been trying out recipes with tofu because well… why not?  i have had many failures but this one has stood true as i perfected it’s recipe.  i am a true meat eater but we should have a few meatless meals a week… or one like me.  hey, im working on it.

makes 2 servings
for quick pickled cucumbers & red onions:
1/2 english cucumber, seeded & chopped into about 1/2 inch pieces
1/4 cup red onion, minced
2 tablespoons roasted garlic rice vinegar
1 teaspoon sugar
salt to taste

.  combine all ingredients & set aside… this can be done ahead of time

for spicy sesame mayo:
1/4 cup mayo
1 tablespoon sriracha
1/2 teaspoon toasted sesame oil
salt to taste

.  combine all ingredients & set aside… this can be done ahead of time

for tofu:
1 package firm tofu, sliced into 6 long slices & pressed by hand to remove water… dont smash it, just press hard enough to get the water out
1/4 cup thai sweet chili sauce
1/4 cup honey
1 tablespoon soy sauce
1 clove garlic, finely minced (i like mine extra garlicky)
1/4 cup peanut oil
1 green onion, thinly sliced for garnish

.  in a medium saute pan ( make sure it can fit 6 slices of tofu) over medium high heat, heat oil
.  add tofu and fry on all sides until golden brown
.  remove any remaining oil from pan & add thai sweet chili sauce, honey, soy sauce & garlic
. cook over medium low heat until the sauce thickens JUST A BIT

assembly:
you can layer the tofu then place cucumber & onions and drizzle with mayo or plate as above (my preference) and garnish with green onion
