the BEST salmon salad i’ve ever had

salmon salad

i often make this with leftover grilled salmon to munch on for lunch for the next few days.  if you dont have any left over, simply cook it with olive oil, salt & pepper any way you’d like & chill in the fridge before making the salad

makes 4 sandwiches/ portions to snack on with veggies

1lb salmon
3 scallions, sliced
3 tablespoons red onion, finely diced
2 tablespoons capers, minced
1-2 tablespoons fresh dill, minced *
1 teaspoon lemon zest
1/3-1/2  cup mayonaise *
1-2 tablespoons plain greek yogurt *
2 teaspoons dijon mustard
salt & pepper to taste

. lightly break apart salmon and place in a bowl (don’t overly break apart the salmon, it will break apart when you mix the salad together)
. add all ingredients & mix just until all ingredients are well combined

* depending on your love for dill, mayo and/or the tang of yogurt you can adjust the amount to you liking

i normally eat this with cucumbers or rice crackers but if i am making it for anyone else, it goes between buttered toast with center cut bacon & tomatoes
